Christmas: Eggplant with Cheese

Ingredients
- 2 eggplants grandes
- 1 cup Linda Tomato Paste
- 1 cup mozzarella shredded
- 1/2 cup cheese parmesano o cheddar
- 1/2 onion chopped
- 1 crushed garlic clove
- 1 tbsp oil
- 1 beaten egg (optional)
- Sal, pepper and oregano to taste
- Pan shredded para empanizar
Preparation
- Slice the eggplants, salt 10 minutes, pat dry and brown in a skillet.
- Make the sauce by sautéing onion, garlic and Linda Tomato Paste until thick.
- Layer eggplant, sauce and cheeses in a baking dish.
- Bake at 180°C for 25–30 minutes until golden on top.
